I installed debian from a usb using unetbootin and the debian
netinstaller, for some reason my fstab is pointing my /boot to the
mount/usb, can I fix this, I don't think its a buggy BIOS?

Just dig up the uuid of your boot partition and update your fstab manually.
This info is usually contained in /dev/disk/by-uuid/ .
